Following our exploration of harvesting nettles for tea and soup, let's delve into a delicious and nutritious recipe for nettle soup. This organic, wholesome soup is not only a treat for your taste buds but is also good for your health and the environment. By using nettles and other organic ingredients, you are making a positive impact on your well-being and the planet.
Why Nettle Soup?
Nettle soup is a fantastic way to enjoy the myriad benefits of this humble plant. Nettles are packed with vitamins A, C, K, and several B vitamins, as well as essential minerals like iron, calcium, magnesium, and potassium. This nutrient-rich soup can boost your immune system, improve digestion, and provide a gentle detox. Plus, by foraging nettles responsibly, you're engaging in sustainable practices that support local ecosystems.
Ingredients
All ingredients should be organic for the best health benefits and to support sustainable farming practices.
- 1 large onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 4 cups of vegetable broth
- 4 cups of fresh nettle leaves (harvested as per our previous guide)
- 2 medium potatoes, peeled and diced
- 1 carrot, peeled and diced
- 1 celery stalk, diced
- 1 bay leaf
- Salt and pepper to taste
- A squeeze of fresh lemon juice
- Optional: a dollop of organic yogurt or a sprinkle of freshly grated Parmesan cheese for garnish
Instructions
- Prepare the Nettles: Wearing gloves, rinse the nettle leaves thoroughly and remove any tough stems. Set aside.
- Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are soft and fragrant.
- Add the Broth and Vegetables: Pour in the vegetable broth, then add the diced potatoes, carrot, celery, and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the vegetables are tender.
- Add the Nettles: Add the cleaned nettle leaves to the pot and simmer for another 5-7 minutes, until the nettles are wilted and tender.
- Blend the Soup: Remove the bay leaf, then use an immersion blender to puree the soup until it is smooth and creamy. If you prefer a chunkier texture, you can blend only a portion of the soup.
- Season and Serve: Season with salt, pepper, and a squeeze of fresh lemon juice to brighten the flavors. Ladle the soup into bowls and garnish with a dollop of organic yogurt or a sprinkle of freshly grated Parmesan cheese if desired.
Health and Environmental Benefits

Nettles are known for their anti-inflammatory properties, support for healthy skin and hair, and ability to help manage blood sugar levels. By choosing organic ingredients, you're not only ensuring the highest nutrient quality but also supporting farming practices that are kinder to the earth, avoiding harmful pesticides, and promoting biodiversity.
